Fajitas

Hola!

We love fajitas (pronounced fah-hee-tas)! Who doesn’t love a great fajita and eating with bare hands? Besides messy (and messy is always good) it’s super fast and healthy! They are commonly made with strips of skirt or flank steak (you can use chicken, shrimp or pork as well),  onions and bell peppers served hot right from the grill with fresh tortillas, guacamole, sour cream, and salsa.

We love grilling but you can fry them up indoors on a hot skillet if you like. The aromas will spread bringing everyone to the table rapidly.

They are perfect for lunch or dinner and such an ease for anyone feeling anxious about planning dinner for the family. We all know how important is turning those hungry faces into happy ones fast!

What you need:

 2 lb skirt/flank steak
2 large bell peppers, sliced into strips
1 lime
1 jalapeno
1 onion
4-6 tortillas
1/4 cup cilantro, chopped
1 tsp. smoked paprika
2 tbsp. olive oil
Salt and pepper to taste
Salsa, sour cream, guacamole and/or shredded cheese to garnish (optional)

What to do:

Start by preparing your steak. I’m a strong believer – meat from the right source doesn’t require a lot of magical marinating and spices around it. Just rub the meat in olive oil, sprinkle some salt, freshly ground black pepper, pinch of cayenne and paprika to bring up the smokiness.

Tip: avoid adding acids to  meat marinates, like citrus juice. Acid from the juice will toughen the meat, just like it does with seafood in crevice. Use zest instead if you want citrus flavor.

Put the steak on the grill with some sliced bell peppers and onions. The heat needs to be very high!

Fajitas

After 3 minutes on one side flip the steak to the other to continue for another minute or 2. Don’t worry it’s thin and cooks in no time! I am terrified of overcooking my steaks!

Let it rest for 5-7 minutes and slice into thin strips. Make sure to slice across the grain, otherwise it can be tough.

And you haven’t turned off your grill yet, right? Make sure to throw your tortillas on the grill for couple of seconds both sides. Don’t skip this step, it’s so worth it!

And now the fun part of building your Fajitas and giving it to your neighbors! Kidding… eat it yourself… fast!

Instructions

  2. Place the flank steak on hot grill.
  3. After 3 minutes on one side flip the steak to the other side to continue grilling for another minute or 2.
  4. Let it rest for 5-7 minutes and slice into thin strips. Make sure to slice across the grain, otherwise it can be tough.
  5. Grill peppers and onions as well. This can be done together with the steak,
  6. Throw your tortillas on the grill for couple of seconds both sides as well. Don’t skip this step, it’s so worth it!
  7. Start building Fajitas with steak and toppings.
