No-Bake Energy Bars

No-bake energy bars

These raw, nut-free, grain-free and sugar-free no-bake energy bars are loaded with healthy seed fiber and contain only natural sweeteners. They make a perfect snack and give you a boost of energy, when you need it the most. Plus, they’re so simple to make, you’ll have no excuse not to make them. Simply heat everything together, press the mixture into a tray, pop it in the fridge for a couple of hours and BOOM – you’ve got yourself a super pretty and healthy feel-good snack.

In this recipe I’ve used hemp and pumpkin seeds, shredded coconut for the base and dried figs with honey for natural sweetness. These bars are nut free, but you are more than welcome to use any combination of your favorite nuts, dried fruits, oats, coconut. So many possibilities.

No-bake energy bars

Ingredients:
1/3 cup hemp seeds
1/4 cup unsweetened shredded coconut
1 cup pumpkin seeds
1/3 cup dried figs, finely chopped
2 tbsp coconut oil
3 tbsp honey
pinch of salt
1 tsp vanilla

No-bake energy bars

Line the bottom of a 9×5 inch loaf pan with parchment paper.

In a medium sized bowl mix together the seeds and figs. In a medium-sized skillet heat the coconut oil, honey, vanilla extract and a pinch of salt. Whisk continuously to combine until bubbly. Let cook for 5 minutes until the mixture darkens in color and smells like caramel.

Add in the mixed seeds and figs to honey and mix to combine until well coated, sticky and warmed throughout.

Pour the mixture into the parchment lined pan and press down firmly with a spatula.

Chill in the fridge to cool for at east 2 hours before cutting into bars. Cut and store in an airtight container in the fridge.

    Figs! What a wonderful idea. Sometimes I get bored of using raisins or dates, but figs is genius. I can’t wait to try it out!
