Pork Fritters

Hmmm… it’s dinner time and there’s a tiny grumble in your tummy that says the simple salad you had for lunch might not take you all the way through the day. Instead of reaching for that dubious bag of chips in your kitchen pantry (is it really the same bag of chips you saw there last month?), try making these delicious and super quick pork fritters.

These little fritters are our family favorite and the recipe comes from my mom. Everyone is a big fan of these bad guys and me too – probably because this is the kind of meal that reminds me of those delightful, but simple and comforting meals I had growing up that were best eaten with some easy home made side dishes (they would include meat as well… Ukraine born and raised, yo!).

These delicious, soft and juicy pork fritters could be a tasty finger food at your next cocktail party. Feel free to experiment with chicken, beef or mushrooms, for vegetarian version, instead of pork, but I honestly think that pork is what makes them so juicy and soft. They refrigerate and reheat very well so you won’t even notice how you’ll be having them for breakfast tomorrow again!

Here, take a plate.

Pork Fritters

Ingredients:
1 lb pork shoulder, minced
2 eggs
1/2 medium onion, minced
2 garlic cloves, minced
1 tbsp sour cream
1 tbsp corn starch
salt and pepper to taste
2 tbsp oil

Pork Fritters

Add pork, onion, garlic, corn starch, sour cream, eggs. salt and pepper to the medium bowl and mix well to combine.

Heat the skillet with oil on a medium high heat and place one tablespoon of the mixture onto the hot skillet. Spread the mixture slightly to create the round shape. Fry covered until golden brown, about 4-5 minutes on one side. Then flip them over to the other side using spatula in one hand and spoon in another. Be careful. The fritters are pretty sticky, so avoid using any sharp objects like forks as they might crumble. Fry for another 2-3 minutes on the other side and place fritter on a plate with lined paper towels to soak up the oils.

Pork Fritters

Serve warm with your best creamy sauce as an appetizer. Or pair it with your favorite side dishes for a complete balanced meal.
