Ultimate Smoked Salmon and Avocado Breakfast Toast

Breakfast and brunch season is in full, official swing. And the queen of them all: Mother’s Day breakfast. So today, in preparation for the main breakfast event, we need to talk about how adorable, delicious, and necessary smoked salmon and avocado breakfast toasts are. How To Make Ultimate Smoked Salmon and Avocado Breakfast Toast

Ultimate smoked salmon and avocado toasts, as I’m calling them, start with a few pieces of toasted bread. Then we are layering the bread with a quick smear of creamy avocado tartar sauce, smoked salmon, cucumber and poached quail eggs. Finally, we are dressing them up with some caviar and micro greens for adorable, delicious and elegant look. A sprinkle of sea salt and pepper on top would make you look kinda fancy, too.

The avocado makes a great replacement to cream cheese in this toast since it’s thick and creamy. While I love my bagel with lox and cream cheese, what my waistline thinks about the meal is a different story. So, if you’re like me and my mom who enjoys the creaminess of the cream cheese and rich flavors of the smoked salmon then this recipe is a great alternative. The avocado works as a healthier, thick and creamy base. No need to replace the smoked salmon since it’s already healthy.

ULTIMATE SMOKED SALMON AND AVOCADO BREAKFAST TOAST

Ingredients

Avocado Tartar Sauce

  • 1 ripe avocado
  • 1 tbsp lime juice
  • 2 tbsp tartar sauce
  • salt/pepper to taste

Poached Quail Eggs

  • 4-6 quail eggs
  • 2 tbsp vinegar
  • 2 cups water

Toast

  • 2 slices bread
  • smoked salmon
  • 1 cucumber ribboned with a veg peeler
  • 1/2 tbsp red caviar
  • micro greens handful
  • salt/pepper to taste

Instructions

Avocado Tartar Sauce

  • Pulse all the ingredients in the blender or food processor for a minute or two to desired consistency.

Poached Quail Eggs

  • The trick to opening the quail eggs so that the yolks stay intact is in using a paring knife. You can’t simply crack them onto a bowl as the yolks are very fragile and might break. Flip the egg upside down and carefully saw a small part of the bottom of the egg. The shell will brake easily and you can pour the eggs into a small bowl.
  • Bring 2 cups of water to a rapid boil. Once boiling, add vinegar. Stir pour the eggs into the water.
  • Reduce the heat to medium and do not stir for about 15 seconds, then carefully stir. After 20 seconds remove the eggs into the ice water bath to immediately stop the cooking process. Line the eggs onto a paper towel and set aside until ready to serve.

Toast

  • Divide the avocado tartar sauce between the bread toasts.
  • Top with smoked salmon, quail eggs, cucumber ribbons, caviar and micro greens.
  • Season with salt and pepper, lime juice and serve immediately.

    Kippered salmon is delicious and is perfect when served with a gentle raspberry vinaigrette mixed green salad topped with either fresh or dried noodle. Also you can follow with the kippered salmon steaks with garlic mashed potatoes, cous cous, or crazy rice. Vegetables to go with the dish can consist of seared asparagus, broccoli, broccoli, or blanched greens.I create this recipe at every weekend. . !

    A mild raspberry vinaigrette mixed green salad with either fresh or dried noodles on top is the ideal accompaniment to the wonderful kippered salmon. Additionally, you can serve the kippered salmon steaks with crazy rice, cous cous, or garlic mashed potatoes. The dish can be served with blanched greens, broccoli, or grilled asparagus as vegetables. This recipe is something I make every weekend.
